Rick Edstrom, age 69 of Hastings, passed away on Wednesday, November 27, 2024.
Ricky Delbert Edstrom was born June 5, 1955, in St. Paul, MN to Lawrence and Francis (Kreiner) Edstrom. He was one of seven children who grew up in Forest Lake, MN and graduated from Forest Lake High School in 1973. After graduation he worked as a meat packer in St. Paul and a butcher at Hormel in Austin, MN. He then moved to Hastings, MN with his three boys and Dawn Finholdt, the mother of his children. Rick worked as a general foreman for Rainbow Inc. at the refinery as an industrial painter for 30 years and became affectionately known as “Rainbow Rick”.
On June 25, 1994, Rick married Maureen (Warren) in Eden Prairie, and he added a daughter to his family. Over the years Rick enjoyed fishing with all of his kids and grandkids, other family members, and numerous fishing trips with his “buddies”. He was most proud of his 10 lb. walleye and it is proudly displayed in the family room. Rick was passionate about deer and pheasant hunting, and even mounted his albino pheasant and bagged many deer including a nice eight-point buck. He perfected his woodworking skills and created many cherished gifts for friends and family members.
His ultimate joy was being “Papa Rick”, spending countless hours with his grandchildren and great grandchildren. He loved to go fishing, camping, boating, tubing, and being a “bleacher creature” at their sporting events. Maureen joined Rick in all the fun with the family. Together they enjoyed trips to San Diego, San Francisco, Florida, Door County and countless other camping trips around the Midwest.
Rick is survived by his wife, Maureen; children, Clay (Jodi), Craig (Lindsay), Cale (Leslee), Jennifer (Andy) Poncin; grandchildren, Morgan, Brenna, Gretta, Jayden, Donavin, Beckett, Lillyan, Steven, Jack, Andrew (Kelsy), Katelynn, Alex; great granddaughters, Lily and Addyson; brother, Kerm (Beth); and by many in-laws, nieces, nephews, cousins, other relatives and friends.
He was preceded in death by his parents, Lawrence and Francis; siblings, Phyllis, Larry, Theodore; infant sister, Suzanne, Rocky; and by his in-laws, Charles and Ardyce Warren.
Memorial services will be held at 11:30 am on Wednesday, December 4, 2024 at St. Philips Lutheran Church in Hastings, with Pastor Gregory Geier officiating. Click here to watch Rick's Memorial Service.

Family and friends are cordially invited to a visitation from 4:00 – 7:00 pm Tuesday evening, December 3, and for one hour prior to the service on Wednesday, all at the church.
