Eileen Margaret Beissel

Eileen M. Beissel, age 89, of Hastings, MN, passed away peacefully on February 27, 2025, surrounded by her loving family. Eileen was born on February 23, 1936, to Robert and Clara (Kasel) Rother in Hampton, MN. She spent her early years helping on the family farm and enjoying time with her siblings. Eileen furthered her education at Good Counsel Academy in Mankato, MN, before returning home, where she met the love of her life, Arthur Beissel. They were united in marriage on April 24, 1957, and eventually settled in New Trier, MN. Together, they were blessed with four children: Jim, Carol, Kathy, and Tom.

Eileen was a devoted wife, mother, grandmother, and great-grandmother. She cherished spending time with her family, playing cards, cross-stitching, completing crossword puzzles, and helping at church. She was known for her delicious cooking, especially her famous pizza burgers, which everyone loved. Eileen had a passion for travel, exploring many states and international destinations, including Alaska, Hawaii, Ireland, and Germany.

She was preceded in death by her husband, Arthur Beissel; daughter, Carol Freiermuth; parents, Robert and Clara Rother; brother, Robert Rother; and sister, Marion Sundberg.

Eileen is survived by her children, James (Patricia) Beissel, Kathy (Gary) Hovel, and Tom Beissel; 10 grandchildren; 17 great-grandchildren; and many other relatives and friends.

In lieu of flowers, memorials are preferred to the family to make a donation in Eileen's honor at a later date.

A Mass of Christian Burial will be held at 11:00 AM on Saturday, March 8, 2025, at St. Elizabeth Ann Seton Catholic Church, 2035 15th St W, Hastings, MN. Visitation will be held at the church on Saturday from 9:30 to 11:00 AM before the Mass. A reception will follow at the church, and burial will take place at St. Mary’s Catholic Cemetery in New Trier, MN.
